gluten free and good

I’m pretty unmotivated in the kitchen unless it involves baking or making cute things. In an effort to actually learn how to cook I have been adding cooking blogs to my google reader. I was inspired today by Rebecca at Cooking with My Kid.  I had some baking and pancake mix on hand by Pamela’s products (all natural wheat and gluten free) so I decided to give it a go.  On the side of the mix was a recipe for muffins that I modified a bit. Sooo yummy!

2 1/2 cups of Pamela’s mix (which contains natural almond meal-yay for sneaking almonds in)

4 eggs

1/2 cup of honey or organic minimally processed sugar

approximately 1 cup of water ( batter should be fairly thick but not cookie dough thick-add more water if needed)

Cooked chopped bacon ( I used Trader’s Nitrate Free brand)

1-2 cups of shredded cheese

Mix all ingredients together and spoon into greased muffin tins. Bake in preheated oven at 350 degrees for 20 minutes.
